how do i change this with just my iphone if that's even possible?

The Mozilla identifier in the UA simply means your browser is Mozilla compatible. I’m using an iPhone X and the UA shows the same as yours.
Mozilla/5.0 (iPhone; CPU iPhone OS 11_4 like Mac OS X) AppleWebKit/605.1.15 (KHTML, like Gecko) Version/11.0 Mobile/15E148 Safari/604.1
You can install a different browser, but here’s what you’ll get with Chrome for iOS:
Mozilla/5.0 (iPhone; CPU iPhone OS 11_4 like Mac OS X) AppleWebKit/604.1.34 (KHTML, like Gecko) CriOS/67.0.3396.87 Mobile/15F79 Safari/604.1
And here’s what FireFox for iOS looks like:
Mozilla/5.0 (iPhone; CPU iPhone OS 11_4 like Mac OS X) AppleWebKit/605.1.15 (KHTML, like Gecko) FxiOS/12.1b10941 Mobile/15F79 Safari/605.1.15
I’m not aware of a way to customize the UA on an iPhone. There are plugins for Chrome and FireFox on the desktop though that do allow for customization.
